Ingredients: 1 beautiful free range chicken, salt, pepper, milk, flour, baking powder, frying oil, sweet or smoked paprika.
Cut the chicken fillet into medium pieces and remove the skin from the pieces. Keep the carcass in the freezer for the broth.
Place the chicken pieces in a bag, season with salt and pepper, mix well and pour over the milk. Leave them to marinate for 2-3 hours in the refrigerator. Then get rid of the milk. Roughly rub the chicken.
Mix 2 or 3 tablespoons of flour with ½ teaspoon of baking powder, add a little paprika and roll the chicken pieces in it.
Heat a frying pan with frying oil and fry the chicken pieces for 5-8 minutes and in batches depending on their size. Lay them out on kitchen paper so they drain well.
Serve fried chicken with raw vegetables, lemon wedges and fried onion rings.
