Here is a cake filled with good chances to meet a day full of energy. A breakfast cake with fruit, nuts and mascarpone, as aesthetic as it is delicious, is Pascal Naessens’ special recipe. The sensible food popess and former model has just published her new recipe book “Ma kitchen vrai” with Racine. Here is one of her delicious recipes!
Cake for breakfast with fruits, nuts and mascarpone
Preparation: 10 minutes
Cooking time: 20 minutes
Ingredients (for 1 cake):
- 100 g mixed nuts
- 150 g berries
- 2 large tbsp. in with. mascarpone (100 g) 2 tbsp. in with. nut paste (40 g)
- 1 egg + 1 egg yolk
Special material: cake mold + parchment paper
- Preheat oven to 180°C.
- Separate the egg yolk and white. Finely chop walnuts with nut paste and egg white. Line a mold with parchment paper and pour the mixture into it. Pack well in the corners.
- Mix the mascarpone with two egg yolks and add the fruit. It’s okay if some of them mix, but it’s not about mixing them either. Spread the mascarpone and fruit mixture over the nut dough in a tin. Put in the oven for 20 minutes. The top layer is deliciously creamy and the nuts are crunchy!
