Cyril Lignac shares her recipe for crispy pasta casserole and takes us back to childhood

Here is Cyril Lignac’s Crispy Pasta Casserole recipe (All to the kitchen, M6):

Ingredients for 4 persons

  • 250 g cooked pasta
  • 20 g butter
  • 20 g flour
  • 1 tbsp mustard
  • ½ liter whole milk
  • 100 g grated Emmental, Gruyère or Comte cheese
  • 100 g grated parmesan cheese
  • 150 g pancetta, bacon or lard, cut into small pieces
  • 50 g sandwich bread, cut into small ½ cm cubes

Preheat oven to 200°C. Pour the butter into a hot frying pan or stewpan, let it melt and add the flour over low heat, mix for 4 minutes so that everything is fried. Add milk. Bring to a boil and reduce heat. Cook until sauce thickens, about 4 minutes. Add mustard from heat and stir again. Add the first 100 grams of cheese and mix. Add pasta and continue to stir. Pour into an ovenproof dish. In the second hot pan, place the meat cubes, let them brown over medium heat, transfer them to a plate with a sheet of paper towel, add the bread cubes to the same pan with cooking oil and lightly fry them. Then pour the meat into the bread, mix. Spread evenly over all pasta. Sprinkle with parmesan. Bake for 5 minutes until the gratin is browned on top.
