– black tea or green tea
– 250 ml cane sugar
– boiling water
– 2.5 liters of spring water
– 1 Scobie
– 500 ml plain komchua
Bring water to a boil and pour it into a large bowl. Brew tea for 5 to 10 minutes. Then remove the tea and add sugar. Stir until the latter dissolves and add fresh water. Let the liquid cool to room temperature. Pour into a glass jar (4 litres), add kombucha base and place SCOBY on top. Then cover the jar with a cloth, securing it with an elastic band. Store 7-10 days in a dark place at room temperature. Pour the liquid into glass bottles. It can be consumed neat (after refrigeration) or re-fermented to add flavor and a pleasant carbonation. For a second fermentation at room temperature, add juice, fruit, or herbs. Reserve 1 or 2 days at room temperature. When bubbles form, refrigerate to stop the process.
