Recipe: Pasta Casserole: Tajine Macrona


  • 300g pasta
  • 300 g tender lean meat (veal)
  • 2 potatoes
  • 5 eggs
  • 1 large red onion, finely chopped
  • 3 tbsp tomato puree
  • 2 triangles of cheese paste
  • 1 garlic clove
  • 1 tbsp red pepper
  • 50 g grated cheese
  • ½ tablespoon of harissa
  • 4 tablespoons olive oil


  1. Heat the oil in a saucepan, then add the chopped onion, crushed garlic and the meat, cut into regular small cubes.
  2. Season with salt and pepper and fry for a few minutes.
  3. Add tomato concentrate diluted in a glass of water, harissa and red pepper powder and cook until the sauce has evaporated.
  4. Meanwhile, cook pasta in salted boiling water for 10 minutes, then drain.
  5. Put a tablespoon of butter on pasta.
  6. Remove meat from heat and let cool.
  7. Add grated cheese, cheese triangles cut into cubes, 2 hard-boiled eggs cut into slices, potatoes boiled in salted water and cut into small cubes.
  8. Add cooked and buttered pasta and 2 raw eggs, then mix well.
  9. In a baking dish, lay out successive layers of pasta interspersed with filling.
  10. Bake 15 minutes.
