Serves: 4 – Prep: 10 minutes – Cook: 25 minutes

  • 2 l (8 cups) pasta, cooked al dente
  • 1 liter (4 cups) nutmeg or nutmeg, diced
  • 1 onion, minced
  • 60 ml (4 tablespoons) olive oil
  • 5 ml (1 teaspoon) dried thyme
  • 2 garlic cloves, minced
  • 8 slices bacon, fried until crispy and chopped
  • 250 ml (1 cup) cheddar or mozzarella cheese, grated
  • salt and pepper for taste

bechamel sauce

  • 125 ml (1/2 cup) butter
  • 125 ml (1/2 cup) flour
  • 1L (4 cups) milk
  • 1 egg, yolk
  • 250 ml (1 cup) cheese, grated
  • salt and pepper for taste

Crisp

  • 125 ml (1/2 cup) panko breadcrumbs
  • 30 ml (2 tablespoons) butter
  • salt and pepper for taste

Training

STEP 1

Preheat the oven, rack in the middle, on the grill (grill)

For the bechamel, melt the butter in a saucepan, add the flour and stir, 1-2 minutes.

STEP 3

While continuing to whisk, gradually add the milk, still over medium heat, stirring constantly, bring the mixture to a boil and continue to cook for about 5 minutes, until you get a smooth creamy consistency.

STEP 4

Quickly add the egg yolk, then the cheese. Check seasoning.

STEP 5

In a hot skillet, sauté the pumpkin and onion in a little oil for 5 minutes.

STEP 6

Then add thyme and garlic. Check seasoning.

STEP 7

In a bowl, mix bechamel sauce, pumpkin, bacon, pasta.

STEP 8

Put the blank in a gratin dish, sprinkle with grated cheese and leave to brown in the oven for 2-3 minutes.

STEP 9

Meanwhile, in a heated skillet, mix together the breadcrumbs and butter until the breadcrumbs are browned.

STEP 10

Sprinkle with breadcrumbs before serving.
