SALMON FILLET WITH FRESH GOAT CHEESE
Servings: 4 to 6

INGREDIENTS

  • 4-6 salmon fillets
  • 2 tbsp balsamic vinegar
  • 1 C. honey
  • 1 cup fresh goat cheese
  • 1 drop of olive oil
  • 1 C. spoon fresh green onion, chopped
  • 1 C. tablespoons fresh tarragon, chopped
  • 4 tbsp Pine nuts
  • Zest of 1 lemon
  • Salt and pepper from the mill

PREPARATION

  1. Preheat oven to 180°C (350°F).
  2. Salt and pepper the salmon fillet before putting it on a plate.
  3. In a small bowl, combine balsamic vinegar and honey, then clean the fish.
  4. Place cheese and olive oil in another bowl. Add green onion, tarragon, pine nuts and lemon zest. Add salt and pepper to taste. Mix well and spread over the salmon fillet.
  5. Bake for 12 to 15 minutes. Serve with fried green vegetables and mushrooms.
