Result ? An explosion of colors, flavors and good nutrients under the sunny name “Sunset Bowl”. Everything we need, in short, to make up for the gloomy winter weather!
Healthy Sunset Bowl Avocado Recipe by Avocateria
For homemade vinaigrette “Avocateria” :
- 1 tbsp coriander powder
- 2 tbsp honey
- 80 g olive oil
- 60 g rice vinegar
Mix all ingredients with a whisk.
To decorate a healthy bowl :
- 1 handful of mesclun
- 1 good portion of quinoa
- Vinaigrette: adjust according to your taste
- 1 half chopped avocado
- 1 tbsp spoonful of salted peanuts
- 4 cherry tomatoes, cut in half
- 1 tbsp tablespoon chopped green olives
- 1 serving classic or beetroot hummus of your choice
