  • 50 g flour
  • 350 g soy milk
  • 100 g vegan cheddar
  • 80 g smoked tofu, cut into matchsticks

Making Vegan Sauce

Melt the butter in a saucepan over low heat. Mix in the flour. Cook the roux for 2 minutes. Pour in the soy milk and cook for 5 minutes until the sauce thickens. Add 60g cheddar and melt it. Stir in smoked tofu.

Boil pasta in a pot of boiling water. After cooking, mix them with the sauce.

Gratin preparation

Preheat oven to 180°C. Place the pasta in a gratin dish and sprinkle with the remaining cheddar cheese. Grill for 10 minutes.
